I am trying to start off this week optimistic. I had a decent day at work today, although I didn’t get nearly enough done (three and a half hours of meetings may have had something to do with that). Tonight, my husband and daughter made dinner (ribs and broccoli). And, although my daughter burned the broccoli in the air fryer, it was good to not have to cook. I did a little grading (so much grading needs to be done). And now I’m making the easiest of cookies because it is all I can muster.

The cookies are simply a can of pumpkin and a box mix for Spice Cake (I also use carrot cake sometimes – that’s more a Summer recipe though). That’s it! I also added in some mini chocolate chips we had left over from something else. They taste like fall, aren’t totally horrible for you and make the house smell like a dessert.

    When you make a regular Tollhouse recipe, it makes like fifty cookies, which is about forty too many for most things I need cookies for. I freeze the rest of the cookie dough in balls and then whenever I need cookies (to take somewhere or because I NEED a cookie after a hard day at work), I just bake however many I need. The originally recipe is easy and just baking them from frozen is super easy. It’s maybe my best life hack.

    These sound GREAT and I bet your house smells SO GOOD. It is the time in the semester where everyone wants to have a meeting about everything and also there are SO MANY things to do. I feel this.
